Apple cider braised short ribs
Your new favorite main dish… apple cider braised short ribs with whipped butternut squash by moi 😙
First time making short ribs and will not be my last. These were surprisingly so easy to make and require pretty simple ingredients. Hope you enjoy and let me know if you try it out ♥️
Ingredients:
3 pounds bone in short rib
1 tbsp flour
3 garlic cloves finely chopped
1 sweet onion
3 large carrots diced
1 tbsp thyme
1 tbsp rosemary
1 cup apple cider vinegar
2 cups beef broth
1 tbsp butter
salt & pepper
For the butternut squash
40 oz butter nut squash cubed
1/4 cup cream
2 tbsp butter
6 garlic cloves
1/4 tsp garlic salt
1/2 tsp salt
Directions:
1. Generously season the short ribs with salt and pepper. Coat the ribs with the tbsp of flour.
2. Sauté the ribs for 3 minutes on each side until slightly brown. I used the sauté setting on my instant pot but you also can use a pan on medium heat.
3. Add to the bottom of the instant pot or slow cooker, the butter, carrots, onion, ribs, garlic, thyme, and rosemary. Put the lid on and slow cook for 6 hours.
4. Preheat the oven to 400 degrees. Toss the butter nut squash in a little oil, salt, garlic powder, and add to a baking tray. Add the whole garlic cloves with the skin on to the tray and roast for 35 minutes or until the squash is soft.
5. Once the squash is soft, pull from the oven and remove the skin off of the garlic. Add to a blender along with the cream, butter, salt, and garlic powder. Blend until smooth and creamy.
6. Serve the tender short ribs with the whipped butternut squash, veggies, and a splash of left over sauce from the slow cooker.
