Cashew chicken

  • Basmati rice (premade packets from TJ’s frozen section work great)

Directions:

  1. Prepare the Chicken:

    • Cut the chicken into small cubes.

    • Heat 2 tbsp of avocado oil in a large skillet over medium-low heat.

    • Add the diced chicken and cook until golden on the edges.

    • Remove the chicken from the pan and set aside in a bowl. Scrape any browned bits in the pan but keep them in the pan.

  2. Make the Sauce:

    • In a large mixing bowl, whisk together soy sauce, water, minced garlic, honey, grated ginger, rice wine vinegar, sesame seed oil, and cornstarch.

    • Add the sauce to the same pan that the chicken was cooked in and simmer on low heat until it thickens. Allow it to bubble slightly but stir occasionally to prevent burning.

  3. Bring it All Together:

    • Once the sauce has thickened, add in the sliced bell peppers, broccoli, cashews, and the cooked chicken. Mix everything into the sauce.

    • Cover the pan with a lid and cook on the lowest heat for about 10 minutes until the vegetables have become tender.

  4. Serve and Garnish:

    • Scoop a generous portion of the cashew chicken mix on top of a bed of basmati rice.
