Chopped Chinese Chicken Salad
My favorite Chinese Chicken salad of all time is from Joan’s on Third. If you are in the LA area, this is a staple. I don’t know how they do it, but it is pretty incredible.
I’ve been wanting to make my own Chinese Chicken salad for awhile now. The key is to chop all of the ingredients super fine! This chopped salad is nice, light, and crunchy. Personally, I like drench my salad in the dressing.
If you have a Trader Joes in your area, I highly recommend to buy the vegan chicken-less seasoning. It gives me top ramen seasoning vibes. I heavily seasoned my chicken in this spice before cooking on the stove. Another tip- I diced my avocado and then sprinkled everything but the bagel seasoning on top before adding to the salad. I wanted to the seasoning to stick. This salad is perfect for lunch or a nice light dinner!
INGREDIENTS
Salad Dressing:
In a jar, shake together the following ingredients:
1 cup olive oil
1/2 cup white wine vinegar
2 tsp honey
1 lime juiced
4 tbsp sesame seed oil
2 tbsp coconut aminos
Salad Ingredients:
2 stalks of romaine lettuce chopped
1/2 bag of chopped red & green cabbage
2 cups of shredded carrots, chopped
5 stalks of chopped green onions
1/2 diced avocado
1.5 cups of chopped macadamia nuts
2 chicken breasts
vegan chicken-less seasoning @traderjoes
Sesame seeds (black & white)
Everything but the bagel season
DIRECTIONS:
Cube the chicken breasts. Season with the vegan chicken-less seasoning and black sesame seeds. Cook in a skillet on medium heat
Finely chop all your veggies and add them in a bowl
Avocado Tip: once diced, sprinkle everything but the bagel seasoning over the cubes and then add to saladOnce the chicken is cooked- add to the greens, top with the nuts and sprinkle sesame seeds over the top.
Pour salad dressing over the top and enjoy!
