Green Chili Chicken Meatball Sliders
These green chili chicken sliders hit it out of the park with my family! I bought the green chilis from a local farmer’s market stand and was trying to brainstorm some fun green chili recipe. My mom and I came up with these chicken meatball sliders and the flavors were GIVING. We slapped them on some slider buns with cheese and enchilada sauce, but they would also taste amazing in a bowl or even served just as meatballs for an appetizer. Instructions below !
INGREDIENTS:
1 pack of kings Hawaiian rolls
Green enchilada sauce
4 pieces of pepper jack cheese
1 pound of ground chicken
1/4 cup chopped roasted chilis
1/2 cup diced white onion
1 egg
1 tbsp minced garlic
1/4 cup breadcrumbs
1/4 tsp smoked paprika
1/4 tsp cumin
1/8 tsp garlic powder
Salt, pepper to taste
Directions
1. In a large mixing bowl, beat 1 egg. Add in the ground chicken, chopped chilis, onion, garlic, breadcrumbs, 1/4 cup green enchilada sauce, and all of the seasons. Mix all of the ingredients until well combined.
2. Roll the meat mixture into meatballs (about golf ball size). Bake at 400 degrees for 20 minutes. Flip the meatballs and then let them bake for another 8 minutes.
3. Cut the kings Hawaiian rolls down the middle. Place the meatballs on top the bottom half of the rolls (12 meatballs with 1 pack of Hawaiian rolls). Add a dollop of green enchilada sauce on top each meatball. Do not over do it with the sauce or else the buns will get soggy!
4. Top the meatballs with the pepper jack cheese slices and then add on top half of the buns. Coat the top of the buns with a tablespoon of melted better and a tablespoon minced garlic. Season with onion salt. Bake at 400 degrees for 15 minutes.
Slice up the sliders and enjoy!!
