Jalapeno Chimichurri Salmon

Welcome to my new dinner series, where I’ll show you just how easy it is to cook a meal for 1. Easy! Minimal ingredients! No leftovers! What more could you ask for?

No hate against meal prep but it’s not my jam. I’m a single girl who is constantly wondering what to cook for dinner and I know I am not alone. I get bored of eating the same meal multiple times in a row but it also pains me to waste food. With my new table for 1 series, you’ll find yourself prepping one easy meal that won’t leave you forced to look at day old salmon.

Ingredients:

1 salmon filet

½ pound baby petit potatoes (I used half of a one pound bag)

Small bunch of asparagus

1 tbsp olive oil 

1 tsp salt 

¼ tsp garlic powder

½ tsp ground pepper

⅓ cup olive oil

1 cup parsley, finely chopped

2 cloves garlic, minced

1.5 tbsp lime juice (key lime west is the best)

1 tbsp finely chopped jalapeno (about ½ a jalapeno)

Pinch of salt 


Directions:

  1. Preheat the oven to 400 degrees. 

  2. Cut the potatoes in half. Add the potatoes to a medium sized mixing bowl and drizzle with a tablespoon of olive oil, ¼ tsp garlic powder, ¼ tsp pepper, and ½ tsp salt. With a spoon or your hands, combine the ingredients until the potatoes are well coated. 

  3. On a baking sheet, add the potatoes to a third of the surface. Bake at 400 degrees for 30 minutes. 

  4. After 30 minutes, pull the tray out of the oven. Add the salmon filet to the middle of the baking sheet and the small bunch of asparagus to the other side. Drizzle with a little olive oil and season with ½ tsp salt and ¼ tsp pepper. Bake for 20 minutes at 400 degrees.

  5. While the meal is cooking, make the jalapeno chimichurri sauce. Remove the stems from the parsley and finely chop. Remove the seeds from the jalapeno and dice into small cubes. In a small mixing bowl, combine the parsley, jalapeno, minced garlic, lime juice, olive oil, and a generous pinch of salt. 

  6. Once the sheet pan meal is done cooking, remove from the oven. Pour the chimichurri sauce on top of the salmon, asparagus, and potatoes. Finish it off with fresh lemon juice and freshly grated parmesan cheese. Enjoy!
