Pistachio Pesto Chicken Prosciutto Bake

This gluten free, dairy free pistachio pesto chicken prosciutto bake is the perfect weeknight dinner. It’s healthy and hearty all at the same time. If you’re meal prepping for the week ahead or cooking for multiple heads, then this dish is for you. Serve it over pasta, turn it into a spinach salad, or serve as is. Details below!

INGREDIENTS:
-2 chicken breasts
- @newmansown light Italian dressing
-1 pack of cherry tomatoes
-1 small head of broccoli (chop into small florets)
-1 pack of prosciutto
-pistachio pesto (see last post for recipe)

DIRECTIONS:
1.Cube the chicken breasts and marinade the chicken in @newmansown light Italian dressing for at least 6 hours (24 hours for the most flavor).
2.Add the chicken and dressing to a baking tray. Mix in the broccoli florets & cherry tomatoes. Bunch & nestle the prosciutto pieces into the mix. Pour over desired amount of pesto and toss.
3.Bake at 400 degrees for 25-30 minutes.
4.Drizzle more pesto over the top and serve.
