Roasted Root & Steak Salad

We love a good salad ๐Ÿ‘๐Ÿป This roasted root and steak salad is bursting with flavor! The combination of roasted potatoes, olives, and steak topped with feta just feels so right. See the complete ingredient list below to make this well balanced salad!

INGREDIENTS:
-Hanger steak
-Mixed greens
-Feta Cheese
-Kalamata olives
-Pickled onions - check out my last post ๐Ÿ‘€
-Cherry tomatoes
-Roasted red pepper
-Pearl potatoes
-Balsamic dressing

DIRECTIONS:
1. Preheat the oven to 400 degrees. Cut the potatoes in half, drizzle evoo over the top, season with rosemary, and bake for 40 minutes. For the last ten minutes, you will want to bring the potatoes to a broil
2. As the potatoes are getting crispy- In a skillet on medium heat, throw in the chopped red bell pepper and cherry tomatoes. You will want these veggies to blister. Youโ€™ll know itโ€™s blistering once they begin to โ€œpopโ€. Set the veggies aside and let them cool.
3. Cook the hanger steak in the same skillet. I throw a bunch of seasoning on my steak. GO CRAZY
4. As the steak cooks, throw in a little butter to prevent the meat from drying out. Once the steak is finished cooking- set aside to cool


Time to assemble the salad:
In a large bowl, place the mixed greens as the base. Throw in the olives, tomatoes, peppers, potatoes, and pickled onions. Cut the steak up and add into the mix. Top with feta cheese and drizzle balsamic salad dressing over the top.

To make your own salad dressing you can whisk the following ingredients together: Balsamic, olive oil, dijon mustard, red wine vinegar, salt, pepper, lemon juice
