Veggie Goat Cheese Quiche

An easy breakfast dish to make for a crowd this year is a simple, delicious quiche. A quiche might sound complicated but it is extremely easy to put together with a simple store bought pie crust. I used a frozen gluten free one from trader joes and it got the job done. With an overall cook time of about 45 minutes, this dish is just what you should be popping in the oven on Christmas morning.

INGREDIENTS:
1 pie frozen pie crust
5 eggs
5 oz goat cheese
1/2 cup of steamed broccoli
1/2 cup caramelized onions
1/8 cup of whole milk
1/8 cup cream
1/2 cup cottage cheese
1 lemon (for zesting)
Salt, pepper, onion salt to taste

Directions:
1. Thinly slice a white onion and caramelize on low heat until soft and golden.
2. Thaw out the pie crust for 15 minutes and then bake in the oven at 375 for ten minutes. Pull it out and let cool
3. In a large mixing bowl, add 5 eggs, 1/2 cup cottage cheese, cream, milk, salt, pepper, and blend it all together. I used an immersion blender but you can also do this in a regular blender.
4. Steam 1/2 a cup of broccoli (you can use the microwave kind to make life easy) and finely chop. Hand mix the broccoli in the egg mixture with the caramelized onions.
5. Add pieces of goat cheese to the bottom of the pie crust and then pour the egg mixture on top. Drop in more pieces of goat cheese and top off the quiche with a little bit of broccoli, onions, onion salt and lemon zest. Bake at 375 for 30 minutes.
6. Finish off with more lemon zest and serve!
