buffalo chicken taquitos

Ingredients:
2 cups shredded chicken - I used store bought rotisserie
½ cup buffalo sauce - I like to use Frank’s Red Hot
⅓ cup greek yogurt
Tortillas - I like to use Siete Foods
White cheddar cheese shredded
Salt, pepper, garlic powder to taste
Blend together the following ingredients for the ranch:
1 cup greek yogurt
1 tbsp mayo
1 tbsp fresh dill
1 tbsp fresh parsley
1 tbsp fresh dill
1 garlic clove chopped
The juice of 1 lemon
½ tsp salt
¼ tsp garlic powder
1 tbsp of water if you desire a thinner consistency
Directions:
In a mixing bowl, combine the chicken, ⅓ cup greek yogurt, and buffalo sauce. Add a pinch of salt, pepper, and garlic powder.
On low heat, add a drizzle of olive oil to a pan and then warm up each tortilla for about 30 seconds until soft.
Lay the tortillas flat on a cutting board. Add a couple spoonfuls of the buffalo chicken, add on a layer of shredded cheddar cheese, and then roll into a taquito. Repeat this process for the rest of the tortillas.
Air fry or bake the taquitos at 375 for 15 minutes or until crispy. Serve with the jalapeno ranch.
