WHITE BEAN AVOCADO DIP

Ingredients:
4 Persian cucumbers
2 avocados
1 can great northern beans, drained
1.5 limes
1 tbsp fresh dill
1 tbsp fresh parsley
1 tsp nutritional yeast
½ tsp flaky salt (Maldon for the win!)
¼ tsp garlic powder
1-2 tsp olive oil
Directions:
Prepare the veggies: Start by dicing the Persian cucumbers and avocados. Place them in a medium-sized mixing bowl.
Add the beans: Drain the liquid from the can of great northern beans, rinse them thoroughly, and then add them to the mixing bowl with the cucumbers and avocados.
Chop the herbs: Finely chop 1 tbsp of fresh dill and 1 tbsp of fresh parsley. Add these vibrant herbs to the mixing bowl, enhancing the freshness and flavor of the dip.
Season and mix: Sprinkle in the nutritional yeast, flaky salt (we love Maldon for its texture), and garlic powder. Squeeze the juice from 1.5 limes into the bowl, drizzle with 1-2 tsp of olive oil, and mix everything well to ensure all the ingredients are thoroughly combined.
