Caesar salad w/ focaccia Bread Crumb

A caesar salad might be ranked as my #1 favorite salad, so I decided to give this classic salad my own little twist. We’re tossing this salad in a creamy homemade dressing with finely chopped pepperonchinis and thinly sliced avocado. Top off this salad with crispy focaccia breadcrumb for a crunchy finish and badabing badaboom, it’s delicious.

Salad Ingredients:
-Butter lettuce
-Pepperonchinis, finely chopped
-1/2 avocado sliced
-Fresh cracked black pepper
-1/2 cup focaccia bread crumbs (I used two pieces of homemade focaccia.. recipe a few posts back!)
-Parmesan
-Avocado oil

Caesar dressing:
-the juice of 1 lemon
-1 egg yolk
-3/4 cup avocado oil
-3 anchovies
-1/4 cup parmesan
-3 cloves garlic
-1 tsp woreshire
-1 tsp red wine vinegar
-2 tbsp dijon mustard
-2 tsp ground pepper
-1/2 tsp salt

For the salad:
1. Pulse the focaccia bread in a food processor until it reaches crumb consistency. To a baking sheet line with parchament paper, add the bread crumbs, a little parmesan, and toss in a little avocado oil and pepper. Bake in the oven at 375 degrees for 10 minutes or until golden and crispy.
2. Blend all of the caesar dressing ingredients together until smooth and creamy. Toss the butter lettuce and chopped pepperochinis in the salad dressing.
3. Top the dressed lettuce off with thinly sliced avocado, focaccia bread crumbs, and fresh cracked pepper.
