Peppered Steak Cauliflower Bowls

These salty peppered steak bowls are savory, delicious, and packed with nutrients. An easy week night meal that’s perfect for grill season and meal prep. I’m approaching my half way mark of #Whole30 and these bowls hit the spot. You can sub for regular rice over cauliflower but either way, hope these bowls give you dinner inspo for going into a new week🫶

Ingredients:
-steak of choice (I used flank steak)
-3 bell peppers
-1 sweet onion
-1 head of cauliflower
-1/2 lime

For the sauce:
-1/2 cup beef stock
-1/4 cup coconut aminos (or soy sauce)
-3 cloves minced garlic
-1/2 lime juiced
-1 tsp sesame seed onion
-1/2 tbsp pepper
-1 tbsp peppercorns

Directions:
1. Mix all of the sauce ingredients together.
2. Cube up the steak. Marinate the steak cubes in the sauce for at least 20 minutes in the fridge.
3. Cut the bell peppers and onions into squares and toss in olive oil, salt, pepper, and garlic powder.
3. Add the steak, pepper, and onions to skewers and grill for 10-15 minutes until the steak has cooked.
4. In a food processor, pulse the cauliflower into rice. Sauté in a pan on medium low heat. Add in the juice of half a lime, salt, pepper, and 1/4 cup of the pepper sauce. Cook on low heat for about 20 minutes or until the rice becomes golden.
5. Add the rice to a bowl and finish it off with the steak, peppers, and onions.
