Crispy Brussels Sprouts & Caramelized Onions with a Dijon Vinaigrette
Clean, crisp, and delicious. I’m all on board for a healthy side dish. The ingredients for these Brussel sprouts are so simple and easy to make! If you don’t have an air fryer, you can bake them for about 30 minutes at 375 and then broil for a few minutes to get that perfect crisp.
INGREDIENTS:
1 bag of Brussels sprouts
1/2 white onion
3 tbsp olive oil
2 tbsp champagne vinegar (or white wine vinegar)
1 tbsp apple cider vinegar
1 tbsp minced garlic
1 tbsp Dijon
Seasonings: salt, pepper, garlic powder, onion powder
Directions:
1. Finely chop and shred the Brussels sprouts. Add to a bowl of water and soak for five minutes and drain the water. This will give them an extra crunch when they cook.
2. Add the brussel sprouts to a mixing bowl and toss in olive oil, salt, pepper, garlic powder, onion salt.
3. Toss the Brussels in the air fryer and bake at 375 for 5 minutes. Open the basket, toss them and bake for another 5. Repeat this 4 times or until crispy.
4. Slice the onion and sauté in avocado oil on low heat until soft and caramelized (about 30-40 minutes).
5. In a mason jar- combine the olive oil, vinegars, Dijon, garlic, salt, pepper and shake.
6. Add the brussel sprouts and onion to a bowl. Toss the veggies in the dressing. Enjoy!
