Pineapple Mint Margarita
Raise your glass because it’s almost Friday! As the week winds down, I can't help but dream of a tropical getaway. While I might not be able to hop on a plane just yet, I’ve found the next best thing—a Pineapple Mint Margarita that tastes like a vacation in a glass.
Initially, I was a bit skeptical about combining pineapple and mint. Would the flavors clash or create something magical? Thankfully, it was the latter. The result was a refreshingly delightful cocktail that left me reaching for a refill.
Ingredients:
2 shots of tequila
1 shot of pineapple juice
Juice of 1 lime
1/2 shot of mint simple syrup
Instructions:
Prepare the Drink: In a shaker, combine the tequila, pineapple juice, lime juice, and mint simple syrup.
Shake and Serve: Shake well and pour over ice.
Garnish: Garnish with a lime wedge for an extra touch of citrus.
How to Make Mint Simple Syrup
Ingredients:
2 cups of water
1 cup of sugar
1 cup of fresh mint leaves
Instructions:
Boil: Bring the water, sugar, and mint leaves to a boil. Stir until the sugar has dissolved completely.
Cool: Remove from heat and let the mixture cool for about 10 minutes.
Store: Strain the syrup into a heat-safe jar and store it in the fridge for at least an hour before using.
