Crispy Tzatziki Potatoes


I was floored at how delicious these turned out! If you need a side dish to bring to your next dinner party, then these are the potatoes for you. I love potatoes, and I love tzatziki, so I was positive this dish could do no wrong. Details below on these heavenly potatoes ✨

INGREDIENTS:
Tzatziki Sauce
-1 cup of plain Greek yogurt or labneh
-1/2 cup grated cucumber
-1 grated garlic glove
-juice of half lemon
-1.5 tbsp chopped fresh dill
-1/2 tbsp olive oil

Potatoes:
-1 bag of small petit potatoes
-1/2 tsp salt
-1/2 tsp thyme
-1/4 tsp cumin
-1/2 tsp smoked paprika
-1/2 tbsp olive oil
-feta to crumble

DIRECTIONS:
1. Peel & grate two Persian cucumbers, about 1/2 cups worth. Drain the water.
2. Mix all of the tzatziki ingredients together. Place in fridge.
3. Bring the potatoes to a boil on medium high heat with salt and then cover with a lid for about 30 minutes. Once the potatoes are soft, drain the water and add to a bowl. Toss in the olive oil and seasonings.
3. Add the potatoes to a baking tray and then smash them down with a water glass. Air fry at 400 degrees for 13 minutes or in the oven for about 20 minutes (till crispy).
4. Plate the tzatziki and then add the potatoes. Finish with fresh feta and fresh chopped dill.
