Mint Basil Summer Salad

My friend once told me that she had the best salad dressing recipe for me. Let me tell you… she delivered! This dressing is so simple, but amazing. It is extremely refreshing and light for those summer days. I decided to make a grilled steak salad to pair with the dressing. If you haven’t tried my picked onion recipe, check deep in my feed. Ingredients:
For the salad
-Flank Steak (marinade in @newmansown for 24 hours)
-Kale
-Cherry Tomatoes
-Cucumber
-Avocado
-Pickled Onions (see my pickled onion recipe deep in the feed)
-Crushed Pistachios
-Feta cheese

For the dressing:
-1/2 cup champagne vinegarette
-3/4 cup olive oil
-1/2 cup mint
-1/2 cup basil
-1 tbsp honey
-the juice of 1 lime
-salt, pepper to taste

Directions:
1. For the steak: Poke holes in the steak and then let it marinade in Newmans Italian dressing for 24 hours. Grill to desired preference.
2. Roast the cherry tomatoes. You can either pan roast them on medium heat on the stove in olive oil, salt, pepper. If you have a grill, wrap them in tin foil and then let it roast for about 10 minutes.
3. Assemble the salad bowl with the kale, diced cucumber, diced avocado, pickled onions, crushed pistachios, feta cheese, steak, cherry tomatoes.
4. Blend together all of the salad dressing ingredients except for the olive oil. Slowly whisk the olive oil into the dressing
5. Drizzle the dressing over the salad and toss.
