Vegan Greek Pasta Salad
Try this refreshing pasta salad to boost your summer days. It will leave you feeling light and satisfied at the same time. Follow below:
INGREDIENTS
Pasta dish:
1 box of @eatbanza - it’s gluten free & a good source of protein 💪🏻
4 Persian cucumbers
1 green bell pepper
½ red onion
1 can artichokes
1 can of hearts of palm
1 heirloom tomato
Greek dressing:
5 tablespoons olive oil
4 tablespoons balsamic reduction
3 tablespoons red wine vinegar
1 table spoon Dijon mustard
½ of a lemon juiced
½ tablespoon of chopped parsley
salt
pepper
DIRECTIONS
Peel the cucumbers. Then, dice or chop all of the vegetables.
Bring a saucepan with water to boil and cook the pasta. I prefer @eatbanza but you can use any pasta.
Once the pasta is cooked, drain all of the water and pour the pasta in a large bowl. Let it cool
Mix in all of the vegetables with the cooked pasta.
In a separate bowl- whisk all of the greek dressing ingredients.
Pour the dressing over the pasta mix and there you go- An easy light, refreshing, pasta salad 🤤
