Peanut Chicken Lettuce Cups

This was one of the first recipes that I came up with. This dish is what led me to think that I should start sharing my recipes!

This dish is light but filling. It’s got a nice crunch and the flavors are poppin! It is best with bib lettuce, but you can use any type of lettuce wrap you prefer.

INGREDIENTS
Chicken Filling:
-Ground chicken
-2 White mushrooms
-½ can of water chestnuts
-2 stalks of celery
-½ tablespoon minced garlic
-2 tablespoons coconut aminos
-2 tablespoons soy sauce
-1 tablespoon white rice vinegar
-2 tablespoons worcestershire sauce
-½ tablespoon Chili paste
-Everything But the Bagel Seasoning - I get mine from @traderjoes

Peanut Sauce:
-¼ cup Peanut Butter
-2 tablespoon Soy sauce
-½ teaspoon minced garlic
-½ tablespoon Honey
-½ of a lime juice
-Water (to thin out)  

DIRECTIONS:

For the chicken:
1. In a large bowl, combine the mushrooms, celery, and water chestnuts (finely chopped), ground chicken, and garlic. Add in the coconut aminos, white rice vinegar, and worcestershire sauce. Mix all of the ingredients together.
2. Cook the mixed ingredients on medium in a skillet. Stir regularly and continue to break the meat up.
3. Add chili paste over the top while stirring and season with Everything But the Bagel seasoning as it continues to cook.

For the peanut sauce:
1. Add the peanut butter and soy sauce in a bowl and mix. Juice half of a lime over the top.
2. Add in honey, minced garlic, and grate ginger over the top and stir. Add in a little bit of water to thin the sauce out.

Scoop the chicken in the bib lettuce, drizzle the peanut sauce over the top, and garnish with green onions for a healthy meal.
