Green Goddess Bowls 🧚
These bowls are extremely easy to make and the ingredients are so clean. It’s a simple dinner for two or the perfect meal prep to have for the week. I followed @thedefineddish recipe for the verde beef. This meat is SO tender and will melt right in your mouth. I used an instant pot but her directions have alternative ways to cook. I used butter lettuce as my base but you could easily swap the greens for rice or quinoa. My green goddess dressing is KEY in this dish- it’s a must. Details below!

INGREDIENTS:
Bowl
-1 flank steak
-1 cup green salsa verde
-1 Red Bell Pepper sliced
-1 small sweet potato diced
-1/4 red onion sliced
-1 cup cauliflower
-1 cup broccoli
-Greens, rice, or quinoa for the base

Green Goddess Dressing:
-Blend the following: 1/2 avocado, 1/2 cup olive oil, 1/3 cup white wine vinegar, 1/4 cup water, 1/2 lemon juiced, 1 tbsp Dijon, 1tsp tarragon, 1 tbsp minced garlic, 1/3 cup fresh parsley

DIRECTIONS:
1. Drizzle veggies with olive oil, salt, pepper, and the veggies in the oven at 375 degrees for 45 minutes or until roasted.
2. Cut your flank steak into 4 sections. Season with salt and pepper. Turn the sauté button on the instant pot and sear the steak on each side for about 4 minutes. Turn the instant pot off and pour in one cup of salsa verde over the steak.Press the manual button and let it set for 45 minutes
3. Once the steak is done, press the valve and let the steam come out. Once all the steam is out, take the steak out and shred with two forks.
4. Add you base of choice to a bowl. Top with veggies and steak. Drizzle with the green goddess dressing & you are ready to dive in.
