Green Goddess Pasta Salad

Time to up the sauce game with my green goddess pasta salad 🤑 This meal ended up being so satisfying! Plus, it’s gluten free and vegan. I created my green goddess sauce awhile back, and it is a staple in my household. I used @jovialfoods gluten free bow tie pasta and I think it’s the best gluten free pasta I’ve tried so far. The crunch of the snap peas and bell pepper add the perfect texture to this dish. Save this recipe for an easy, summer meal ✨

Ingredients:
@jovialfoods gluten free pasta
3/4 cup chopped green bell pepper
1/2 cup chopped artichoke hearts (I bought the kind marinated in olive oil)
3/4 cup sliced snap peas
1/8 cup toasted pine nuts

For the green goddess dressing:
-blend together: 1/3 cup white wine vinegar, 1/2 cup olive oil, 1 tbsp minced garlic, 1 tbsp Dijon, juice of 1/2 lemon, half an avocado, 1 tsp tarragon, handful of fresh parsley, sprinkle of salt

Directions:
1. Bring water to a boil with salt. Add in the pasta and let cook until soft. Once soft, add pasta to colander and drain. Rinse with cold water.
2. Add the pasta to a mixing bowl and mix in a tiny amount of olive oil to prevent the noodles from getting dry and sticking to one another.
3. Chop the veggies and add them to the pasta.
4. Toast the pine nuts on low heat for 2-3 minutes. These will cook fast, so keep your eye on them and don’t burn them like me HA
4. Blend the green goddess sauce and pour over the pasta salad. Toss and serve or keep in the fridge to have on hand for the week 🤌🏻
