Super Simple Greek Salad

When I don’t feel like cooking, this meal is my go to. I make a variation of this salad every week for when I’m feeling lazy in the kitchen but still wanting to eat healthy. It takes about 10 minutes to chop all of the veggies and to toss everything together. This easy salad is also a great side dish to bring to a picnic, dinner party, or the beach. You can also make a big batch of it, and meal prep them in mason jars for the week. It’s so easy!

Ingredients:
-Garbanzo beans
-Persian cucumber
-Tomato
-Pepperochinis
-Kalamata olives
-Avocado
-Feta
-Lemon
-Fresh dill
-Olive oil
-Salt, pepper

Directions:
1. Chop all of the veggies and add them to a big mixing bowl with the garbanzo beans.
2. Toss the veggies in olive oil, salt, and the juice of half a lemon
3. Top with fresh feta, dill, and fresh cracked pepper
