Loaded Avocado Toast
LOADED AVOCADO TOAST - Avocado toast is one of those items that checks off all the boxes. Plus, this one has pickled red onion and anything that’s pickled has my heart. This delicious avocado toast will keep you coming back for more. This dish is great for whether you are craving a light snack or want to take your picnic to the next level! Pickling your own onions is SO easy. The ingredients are simple and the perfect combination of flavors to make your tastebuds dance.
INGREDIENTS:
Ciabatta (you can use any type of bread but ciabatta is #1 in my book)
1 avocado
Chive & onion spread
Pickled red onion
Everything But the Bagel seasoning - shoutout to @traderjoes
1 lemon wedge
Olive oil
Sea salt
Pepper
DIRECTIONS:
1. Cut the Ciabatta in half - this step will depend on the type of bread you get but you will want it to be flat and shaped like toast/crostini.
2. Preheat the oven to 350 degrees. Brush olive oil over the top of the bread. Sprinkle with sea salt.
3. Put the toasties in the oven and bake for about 10 minutes. The key is letting the bread get a little crunchy and toast like texture.
4. Once the bread is finished, take them out of the oven and cool.
5. Once cooled, apply a thin layer of the chive & onion spread to the crostini. If you do not let the bread cool- the spread will melt, therefore ruining the dish 🥵
6. Place sliced avocado over the spread and top with pickled onion.
7. Sprinkle EBTB seasoning and juice a little lemon over the top
