White bean & Kale Salad
If you’re a frequent flyer or have even just been once to Erewhon, then you understand the hype of this salad. The white bean and kale salad is one of my favorite items that I find myself getting time after time after I go to the marker... It does no wrong. It’s simple, filling, and delicious. This salad is the perfect lunch when you’re in a crunch for time. It takes about 10 minutes to make and is made with easy, clean ingredients. The real one is made with sunflower seeds, but I opted for pine nuts since that’s what I had. You could also sub in pistachios or pumpkin seeds. Details below🍴
For the Salad:
-2 cups of finely chopped, washed, and massaged kale
-2/3 cups of white cannellini beans
-1/2 of an avocado diced
-1/4 cup of nuts or seeds: pine nuts, sunflower seeds, pistachios, pumpkin seeds
For the dressing, shake together the following:
-2 tbsp extra virgin olive oil
-2 tbsp white wine vinegar
-1 tbsp lemon juice
-1/2 tbsp dijon mustard
-1 tsp garlic powder
-1 tsp salt
-1/2 tbsp maple syrup
