Whole30 Chicken Lime Soup

It’s officially soup season! This chicken lime soup is really what got me through Whole30. Its rich in flavor, full of nutrients, and it’s good for YOU!

If you are not aware of the Whole30 diet, I recommend to take a look into it. It’s 30 days of major dietary restrictions. While I do not promote restricting yourself of foods you love- I do believe it’s a good way to reset your body and test your will power. During those 30 days, you really learn how to eat with fresh, clean ingredients.

INGREDIENTS:
-32 oz chicken bone broth
- 1 can of coconut milk
-1 orange bell pepper
-1 small white onion
-1 jalapeño
-2 limes
-Shredded chicken
-Cayenne pepper
-S&P

DIRECTIONS:
1. Dice all of your veggies and sauté them with olive oil in a big soup pan
2. Once the veggies are sautéed, throw in the shredded chicken. I like to buy a rotisserie chicken and shred it... makes it a little easier 😅
3. Put a lid on top and let it sit for five minutes on low
4. Pour in your bone broth. Cover with a lid and let it sit low for 15 minutes
5. Pour in the can of coconut milk and stir. Juice 2 limes into then mix and continue to stir
6. Add in salt & pepper to taste and a dash of cayenne
7. Add a 1/3 cup of chopped cilantro
8. Place the lid on the pot and let the soup sit on low for about 15-20 minutes

When serving- you can garnish your soup bowls with lime, cilantro, and avocado 🤤

Side note: The coconut milk can look a little off after it sits for awhile 🥴 All you need to do is give it a nice stir and you’re good to go 👍🏻
