Bacon Onion Marmalade Burgers

I’d be lying if I said I didn't often think about the burger from The Post Brewing Company. Recently, I decided to take matters into my own hands and recreate it at home. To my surprise, the result was incredible. The star of this burger is undoubtedly the bacon onion marmalade, complemented by an English muffin bun, special sauce, and spicy pickles. Trust me, you HAVE to make these this summer.

Ingredients

For the Marmalade:

  • 6 pieces of applewood smoked bacon

  • 1 medium sweet onion

  • 1 cup apple cider vinegar

  • 1/2 cup balsamic vinegar

  • 1/4 cup white wine vinegar

  • 1/4 cup brown sugar

  • Salt and pepper to taste

For the Burger:

  • English muffin for bun (I bought mine locally from @jeannots_patisserie_bistro)

  • Cheddar cheese

  • Spicy pickles

  • 1 pound ground sirloin beef

  • 2 tbsp BBQ sauce

  • 1 tsp salt, onion salt, pepper

For the Sauce:

  • 1/2 cup mayo

  • 1/4 cup ketchup

  • 2 tsp Worcestershire sauce

  • 1 tsp salt, garlic powder

  • 1.5 tsp pepper

Directions

For the Marmalade:

  1. Cook the Bacon: Cook the six pieces of bacon until crisp. Remove from the pan and set aside.

  2. Cook the Onions: Slice the sweet onion and cook in the bacon fat over medium heat for about 15 minutes until soft.

  3. Combine Ingredients: Chop the bacon into bits and add back to the pan. Add the apple cider vinegar, balsamic vinegar, white wine vinegar, brown sugar, salt, and pepper.

  4. Simmer: Simmer on low for about an hour, or until the liquid reduces and the mixture reaches a jammy consistency. Stir occasionally.

For the Sauce:

  1. Mix Ingredients: Whisk together the mayo, ketchup, Worcestershire sauce, salt, garlic powder, and pepper until well combined.

For the Burger:

  1. Prepare the Patties: Mix the ground beef with seasoning and BBQ sauce. Form into patties.

  2. Grill the Patties: Grill to your preference. Add cheddar cheese halfway through cooking. I used a @bakingsteel to grill the burgers on.

  3. Toast the Muffins: Add a little butter to the English muffins and toast them on the grill or in a pan.

  4. Assemble the Burger: Start with the bottom bun, add the patty, sauce, pickles, and a generous serving of bacon onion marmalade. Top with the other half of the English muffin.
