Thai Crunchy Salad
Another crunchy salad to add to the weekly rotation! This Thai Crunchy Salad fulfilled all of my dreams. Tossed in a peanut butter dressing, it was packed with protein, nutrients, and flavor. I used chicken but I recommend any protein.. salmon, shrimp, tofu, etc. Details below!
INGREDIENTS:
-Rotisserie chicken (I used a store bought and shredded it)
-cabbage
-bell pepper
-carrots
-snap peas
-cucumber
- green onions
-macadamia nuts
-black sesame seeds
Dressing:
1/4 cup peanut butter
2 tbsp soy sauce
1/2 tsp minced garlic
1/2 tbsp honey
the juice of 1/2 a lime
water to thin out, if needed
Directions:
1. Sliver all of your vegetables and add it to bowl with chicken.
2. Blend all of the dressing ingredients together. Toss in the salad.
3. Finish with black sesame seeds and crushed macadamia nuts.
