Chicken Feta Meatballs

If I could pick one type of food to eat the rest of my life.. it would be Mediterranean. Feta and chicken also happen to be some of my favorite foods, so it is no surprised that this dish hit the spot. The combination of chicken, feta, and red onion is quite nice…

This meal took about 20 minutes from prep to finish. I placed it over a bed of veggies but it would be great with rice as well. It was super simple, easy, and delish!

INGREDIENTS:

  • 1 pack of ground chicken

  • 1 egg

  • 1/4 cup chopped red onion

  • 1 tbsp minced garlic

  • 1/2 cup crumbled feta (I buy the block and crumble it)

  • salt and pepper to taste

DIRECTIONS:

  1. In a large bowl, combine all of the ingredients until mixed.

  2. Roll the mixture into small balls and cook in olive olive on medium heat. Cook until golden.

Bowl Lineup:

  • Mixed greens (kale, romaine, cabbage)

  • Lupini beans - I use BramiSnacks

  • Cucumber

  • Tomato

  • Kalamata olives

  • Tzatziki sauce

  • Balsamic

Yummy, yummy!
