Pistachio Pesto Crusted Halibut

The perfect summer dish is here! I am excited to share my new recipe- pistachio pesto crusted halibut.

I love a good white fish... Specially during the summer paired with a nice Pinot Grigio! This dish is simple, healthy, and clean. The pistachio pesto is full of flavor and cooks well with the fish. The overall cook time is about 25 minutes, making the perfect meal so easy. Details below for your next dinner..

INGREDIENTS
-Halibut fillets (any fish will do, halibut is my fav)
-1/2 cup pistachios
-1 cup olive oil
-1 lemon juiced
-2 tbsp minced garlic
-handful basil
-handful spinach
-salt and pepper to taste

DIRECTIONS:
1. Preheat the oven to 400 degrees
2. In a food processor or blender, blend together the basil, spinach, pistachios, olive oil, garlic, lemon juice, salt, pepper
3. Take a spoonful of the pesto and spread it on top of the fish fillets
4. Add crushed pistachios on top of the pesto covered fish
5. Bake in the oven for 15-20 minutes, or until the fish is cooked
